Renovations for the new butcher and convenience store, JC’s Custom Meats, is underway Thursday, Aug. 31, 2023, and will be opening next week at 775 Southgate, Pendleton. The store is planning to be fully open in early November.

PENDLETON — Pendleton is getting a combination butcher shop and mini mart.

JC’s Custom Meats will be soft-opening the first full week of September at 775 Southgate, in the former location of the Southgate Mini Mart, offering a variety of specialty meat products as well as maintaining certain elements of the location’s past as a convenience store.

“We’re going to be a one-stop shop for meat, beer, wine, and coffee,” JC’s Custom Meats owner JC Olinger said.

He said he plans a larger opening in November once the business has build all of its walk-ins and the meat cutting room.

For now, Olinger explained all the meat products he will be carrying will have been processed off-site until he can construct the necessary refrigeration to store meat he can process himself.

“I’m getting older, I’ve been a contractor here for a long time,” Olinger said. “When I saw this place was up for lease, I knew it was time for a new chapter in my life, so I rented it. I always wanted to have a meat shop, so here we are.”
