New Mexican eatery opens in Pendleton

PENDLETON — You will find tables in the dining room, but manger Alma Alvarez of the new Rolberto’s Mexican Food in Pendleton describes her dining spot as “more like a fast food Mexican restaurant.”
The new eatery is located in the neighborhood of Walmart at 110 SW 20th St., Suite 1.
The menu offers much, she said.
“The recipes come from our owner, Gustavo Gaytan,” Alvarez said. Gaytan is from Twin Falls, Idaho, and this is the 11th Rolberto’s location to open. Other restaurants in the chain include Twin Falls (of course,) Mountain Home, Burley, two locations in Spring Creek, Carlin, Elko, Winnemucca and Ely, Idaho; Wendover, Utah; and now Pendleton.
Alvarez said opening day was Nov. 3, but customers didn’t discover the new dining place until the next day.
She said eight employees staff the restaurant.
“The most popular item is the chili relleno, followed by tamales, chimichangas, and breakfast burritos,” Alvarez said.
She suggested that while variety, and a lot of it, is the spice of life, it could also be that spice is the variety of life.
“I feel we have like a larger menu than most places,” Alvarez said.
Operating hours are 6 a.m. to midnight, seven days a week, she said.
